There is a glat griddle option, or a raised grill line option. You just flip the two plates to change them. You can also either cook your food with the lid down, say for burgers or grilled veggies, or lay the griddle open for pancakes or two large pieces of meat. If you want to, you can order waffle plates for this machine. I've seen them on Amazon. It makes super-yummy grilled cheese sandwiches!
There is a grease catchment cup that slides out, and a tool for clearing grease or cleaning.
The booklet contains recipes for Breakfast, Paninis, Main Courses,Side Dishes, and even Dessert! It's a fun machine, but now that I am eating only raw fruits and veggies, I don't have use for it.
